Low carb pancakes
When you think about pancakes you probably believe that they are banned from your diet. However, the truth is that they can be the ideal low carb snacks. For these, you will need 2/3 cup almond flour, 2 large eggs, 2 oz cream cheese, cubed, 1 tablespoon water, 1 teaspoon baking powder, 2 teaspoons vanilla extract, 1/2 teaspoon cinnamon, 2 tablespoons sugar and butter and sugar-free syrup.
Then you blend all the ingredients until they are smooth. You heat a non-stick skillet to medium heat and pour 3 to 4 tablespoons of batter for each pancake. You flip the pancake once you see little bubbles form, and wait until the pancake is browned on each side.
Steak fajita roll-ups
Who thought that steak fajitas can be low carb foods? In order to cook this, you will need to prepare the seasoning mix first. Then cut the steak into about 2-inches wide and 6-ish inches long strips and season it.
Get some onions and bell peppers and slice them. When you are done, heat up your grill pan and cook the vegetables for a few minutes. Transfer the peppers to the steak and roll the steak up. Use a toothpick to secure it and then place it back into the grill pan and cook it for another 2 minutes per side.
Broccoli cheese soup
Low carb soups are also a thing, and it is very easy to prepare them. For a broccoli cheese soup, you only need 5 ingredients and it will be done in 20 minutes. You will need 4 cups of broccoli, 4 cloves garlic, 1 cup of heavy cream, 3 ½ cups of chicken broth and 3 cups cheddar cheese.
Get a large pot and choose medium heat. Then sauté the garlic for one minute until fragrant. After that, add the chicken broth, the chopped broccoli and the heavy cream. Increase the heat until it boils and then reduce it. Let it simmer for 10 to 20 minutes until the broccoli becomes tender.
Now you can start adding the shredded cheddar cheese, but not all at once. Continue to stir until it melts. You should start by adding ½ cup, let it simmer until it melts and then repeat this step until you are done with the cheese. Avoid high heat in order to prevent seizing and once all the cheese melts remove the pot from heat.
